Today I would like to share with you a stellar breakfast that I have been enjoying for a while, and have been meaning to share on the blog for months now. It is Avocado toast! Yes, pretty popular lately, and I discovered it some months ago and have never looked back. It has been my breakfast of choice not only because Avocado is good for you, with vitamins B, K, C and E, or because of the good fats it contains, but because it is easy and delicious.
Lately I am seeing avocados everywhere in Bulgaria, and although most of the time they are not ready to be eaten just yet, I stock up with a couple and wait for them patiently to become just a tiny bit soft and the color under the stem is green it is good to go, if it is very light and yellow, it is too green, and if it is brown, your avocado is over ripe and will be a brown slimy mess. Anyways, when your avocado is perfect, you put it on toast and enjoy! I want to share with you my two very easy and most favourite ways to avocado toast.
What You Need:
A piece of wholewheat delicious bread
Half ripe avocado
Cream cheese/goat cheese or butter
Salt, olive oil and smoked pepper flakes
What you do:
Toast the bread, spread the cream cheese or goat cheese, whatever you prefer, slice thinly the avocado and then sprinkle a bit of salt. To finish it off drizzle a few drops of extra virgin olive oil. Enjoy!
Toast the bread. Spread butter or cream cheese on toast. Mush the avocado in the skin, after you halve it, with a spoon or a fork to get rough chunky consistency. Spread the avocado on top of the toast and sprinkle salt and smoked pepper flakes. The combination is divine on so many levels!
There are countless other combinations that go along with the avocado such as – goat cheese and cherry tomatoes, poached egg, salmon, even bananas, but I do prefer simple food, so I keep on enjoying the two combinations above.
